Ingredients

  • 1 kg chicken pieces (thighs, drumsticks, or mixed)
  • 2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon allspice
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 cup chicken broth or water
  • 1 medium carrot, sliced
  • 1/2 bell pepper, sliced
  • 1 green onion, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, paprika, and allspice. Let sit for 15 minutes.
  2. Heat oil in a large pot over medium heat and add brown sugar.
  3. Allow sugar to melt and turn deep golden brown.
  4. Add chicken and coat in caramel, browning on all sides.
  5. Add onion, garlic, and thyme; sauté for 2–3 minutes.
  6. Stir in soy sauce and ketchup.
  7. Add broth or water and bring to a gentle boil.
  8. Add carrots and bell peppers.
  9. Reduce heat, cover, and simmer for 30–35 minutes until chicken is tender.
  10. Adjust seasoning if needed and garnish with green onions.
  11. Serve hot with rice or sides.
