Ingredients

- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon allspice
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 cup chicken broth or water
- 1 medium carrot, sliced
- 1/2 bell pepper, sliced
- 1 green onion, chopped (for garnish)
Instructions
- Season chicken with salt, pepper, paprika, and allspice. Let sit for 15 minutes.
- Heat oil in a large pot over medium heat and add brown sugar.
- Allow sugar to melt and turn deep golden brown.
- Add chicken and coat in caramel, browning on all sides.
- Add onion, garlic, and thyme; sauté for 2–3 minutes.
- Stir in soy sauce and ketchup.
- Add broth or water and bring to a gentle boil.
- Add carrots and bell peppers.
- Reduce heat, cover, and simmer for 30–35 minutes until chicken is tender.
