Ingredients

  • 4 large eggs
  • 120 g halal beef or chicken sausage, sliced
  • 1 small onion, finely chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons milk or cream
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste
  • 1 tablespoon chopped parsley
  • 1 small tomato, diced (optional)
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Crack the eggs into a bowl. Add the milk, salt, black pepper, and sweet paprika. Whisk until smooth and lightly foamy.
  2. Heat the olive oil in a nonstick skillet over medium heat. Add the sliced halal sausage and cook for 2 to 3 minutes until lightly browned.
  3. Add the chopped onion and butter. Cook for another 2 minutes until the onion softens and becomes fragrant.
  4. Add the diced tomato if using and cook for 1 additional minute.
  5. Reduce the heat to low. Pour the egg mixture into the skillet and let it sit briefly before gently stirring with a spatula.
  6. Slowly fold the eggs until soft, creamy, and just set.
  7. Remove from the heat while the eggs are still slightly glossy.
  8. Sprinkle with parsley and shredded cheese if desired. Serve warm.
