Description
A comforting Hungarian layered potato casserole made with tender potatoes, eggs, savory sausage, and a creamy paprika-infused sauce.
Ingredients
- 6 medium potatoes (about 1 kg), peeled
- 4 large eggs
- 250 g halal beef or turkey sausage, sliced
- 1 large onion, finely chopped
- 2 tablespoons vegetable oil
- 400 g sour cream
- 100 ml milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons butter
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish with butter.
- Boil potatoes for 10–12 minutes until slightly tender, then slice.
- Boil eggs for 9–10 minutes, peel, and slice.
- Sauté onion in oil until soft and golden.
- Mix sour cream, milk, salt, pepper, and paprika.
- Layer potatoes, eggs, sausage, and onions in the dish.
- Spoon sour cream mixture over each layer.
- Repeat layers, finishing with potatoes on top.
- Spread remaining cream mixture and dot with butter.
- Bake for 40–45 minutes until golden and bubbling.
- Let rest for 10 minutes before serving.
Notes
- Do not overcook potatoes before baking.
- Let casserole rest before slicing.
- Add cheese for extra richness.
- Can substitute sausage with chicken or vegetables.
- Reheats well and tastes better the next day.
