Description

A traditional Hungarian comfort dish featuring tender chicken simmered in a creamy paprika-infused sauce and served over noodles, rice, or dumplings.


Ingredients

  • 2 pounds chicken thighs or drumsticks, skin removed
  • 2 tablespoons olive oil
  • 2 large onions, finely sliced
  • 3 cloves garlic, minced
  • 3 tablespoons Hungarian sweet paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1 medium tomato, chopped
  • 1 green bell pepper, sliced
  • 2 cups chicken broth
  • 1 tablespoon all-purpose flour
  • 3/4 cup sour cream
  • 1 tablespoon fresh parsley, chopped
  • Cooked egg noodles or rice for serving

Instructions

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium heat.
  2. Add the sliced onions and cook for 8 to 10 minutes until softened and lightly golden.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Remove the pan briefly from the heat and stir in the sweet paprika and smoked paprika.
  5. Return the pan to the heat and add the tomato paste, chopped tomato, and sliced bell pepper.
  6. Cook for about 5 minutes until the vegetables soften slightly.
  7. Season the chicken with salt and black pepper and add it to the skillet.
  8. Turn the chicken gently to coat it in the paprika mixture.
  9. Pour in the chicken broth and bring to a gentle simmer.
  10. Cover and cook for 35 to 40 minutes until the chicken is tender and fully cooked.
  11. In a small bowl, whisk together the flour and sour cream until smooth.
  12. Temper the sour cream mixture with a few spoonfuls of hot sauce from the skillet.
  13. Slowly stir the sour cream mixture back into the skillet.
  14. Cook uncovered for another 5 minutes until the sauce thickens.
  15. Sprinkle with fresh parsley and serve hot over egg noodles, rice, or dumplings.

Notes

  • Use authentic Hungarian sweet paprika for the best flavor.
  • Do not burn the paprika, as it can become bitter.
  • Chicken thighs stay juicier than chicken breast during simmering.
  • Greek yogurt can replace sour cream for a lighter version.
  • Store leftovers refrigerated for up to 3 days.
