Description
A traditional Hungarian comfort dish featuring tender chicken simmered in a creamy paprika-infused sauce and served over noodles, rice, or dumplings.
Ingredients
- 2 pounds chicken thighs or drumsticks, skin removed
- 2 tablespoons olive oil
- 2 large onions, finely sliced
- 3 cloves garlic, minced
- 3 tablespoons Hungarian sweet paprika
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon tomato paste
- 1 medium tomato, chopped
- 1 green bell pepper, sliced
- 2 cups chicken broth
- 1 tablespoon all-purpose flour
- 3/4 cup sour cream
- 1 tablespoon fresh parsley, chopped
- Cooked egg noodles or rice for serving
Instructions
- Heat the olive oil in a large deep skillet or Dutch oven over medium heat.
- Add the sliced onions and cook for 8 to 10 minutes until softened and lightly golden.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Remove the pan briefly from the heat and stir in the sweet paprika and smoked paprika.
- Return the pan to the heat and add the tomato paste, chopped tomato, and sliced bell pepper.
- Cook for about 5 minutes until the vegetables soften slightly.
- Season the chicken with salt and black pepper and add it to the skillet.
- Turn the chicken gently to coat it in the paprika mixture.
- Pour in the chicken broth and bring to a gentle simmer.
- Cover and cook for 35 to 40 minutes until the chicken is tender and fully cooked.
- In a small bowl, whisk together the flour and sour cream until smooth.
- Temper the sour cream mixture with a few spoonfuls of hot sauce from the skillet.
- Slowly stir the sour cream mixture back into the skillet.
- Cook uncovered for another 5 minutes until the sauce thickens.
- Sprinkle with fresh parsley and serve hot over egg noodles, rice, or dumplings.
Notes
- Use authentic Hungarian sweet paprika for the best flavor.
- Do not burn the paprika, as it can become bitter.
- Chicken thighs stay juicier than chicken breast during simmering.
- Greek yogurt can replace sour cream for a lighter version.
- Store leftovers refrigerated for up to 3 days.
