Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 450 g cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar (for topping)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar, then press firmly into the pan.
  3. Bake crust for 8-10 minutes and let cool slightly.
  4. Beat cream cheese and sugar until smooth, then add eggs one at a time.
  5. Mix in vanilla extract and sour cream until fully combined.
  6. Pour filling over crust and spread evenly.
  7. Bake for 30-35 minutes until center is set but slightly soft.
  8. Cool completely.
  9. Cook strawberries, sugar, and lemon juice in a saucepan until juicy.
  10. Add cornstarch mixture and cook until thickened, then cool.
  11. Spread topping over cheesecake layer and refrigerate for at least 3 hours.
  12. Slice into bars and serve chilled.
