Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped dates
- 1/2 cup chopped walnuts
- 1/2 cup chocolate chips
- 1/4 cup milk
Instructions
- Preheat oven to 180°C (350°F) and grease or line a mini muffin tin.
- Mix melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs one at a time, then mix in vanilla extract.
- Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
- Gradually combine dry ingredients with wet mixture, mixing gently.
- Add milk and mix until smooth batter forms.
- Fold in dates, walnuts, and chocolate chips.
- Fill muffin cups about three-quarters full.
- Bake for 12–15 minutes until a toothpick comes out clean.
- Cool briefly before transferring to a rack.
