Description

High-Protein Ground Beef & Sweet Potato Bowls are a balanced, nourishing meal made with roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and fresh avocado. They are hearty, flavorful, and perfect for meal prep or a satisfying lunch or dinner.


Ingredients

  • 1 lb ground beef (lean preferred)
  • 2 large sweet potatoes
  • 1 packet taco seasoning (about 11.5 tablespoons)
  • 1/4 cup salsa (optional)
  • 1 (16 oz) container cottage cheese
  • 1 large avocado, sliced
  • 12 tablespoons honey or hot honey
  • Flaky sea salt, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and poke holes in sweet potatoes.
  2. Place sweet potatoes on a baking sheet and bake for 50–60 minutes until soft.
  3. While baking, cook ground beef in a skillet over medium heat until browned.
  4. Drain excess fat if needed.
