Ingredients
- 500 g ground beef
- 250 g ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, cubed
- 6 cups beef broth
- 1 cup water
- 1/2 cup heavy cream
- 1 tablespoon flour
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Mix breadcrumbs and milk in a bowl and let soak for a few minutes.
- Add ground beef, ground chicken, onion, garlic, egg, salt, pepper, allspice, and nutmeg. Mix gently.
- Form small meatballs and set aside.
- Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes.
- Add potatoes, broth, and water, then bring to a boil.
- Add meatballs and simmer for 15–20 minutes until cooked through.
- Whisk cream and flour together, then stir into soup.
- Simmer for 5 more minutes until slightly thickened.
- Add parsley, thyme, salt, and pepper to taste.
- Serve hot.
Notes
- Do not overmix meatball mixture to keep them tender.
- Add extra vegetables like peas or spinach if desired.
- Use coconut cream for a dairy-free option.
- Store leftovers up to 3 days in the refrigerator.
- Freeze up to 2 months.
- Add broth when reheating if soup thickens.
