Description

A hearty and comforting soup featuring tender Swedish-style meatballs, wholesome vegetables, and a rich, lightly creamy broth.


Ingredients

  • 500 g ground beef
  • 250 g ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, cubed
  • 6 cups beef broth
  • 1 cup water
  • 1/2 cup heavy cream
  • 1 tablespoon flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Mix breadcrumbs and milk in a bowl and let soak for a few minutes.
  2. Add ground beef, ground chicken, onion, garlic, egg, salt, pepper, allspice, and nutmeg. Mix gently.
  3. Form small meatballs and set aside.
  4. Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes.
  5. Add potatoes, broth, and water, then bring to a boil.
  6. Add meatballs and simmer for 15–20 minutes until cooked through.
  7. Whisk cream and flour together, then stir into soup.
  8. Simmer for 5 more minutes until slightly thickened.
  9. Add parsley, thyme, salt, and pepper to taste.
  10. Serve hot.

  • Do not overmix meatball mixture to keep them tender.
  • Add extra vegetables like peas or spinach if desired.
  • Use coconut cream for a dairy-free option.
  • Store leftovers up to 3 days in the refrigerator.
