Ingredients
- 2 cups rolled oats
- 1 cup finely grated carrots
- 1/2 cup pitted dates
- 1/3 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup chopped walnuts
- 1/4 cup shredded coconut
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Soften dates in warm water if needed, then drain.
- Blend oats, dates, almond butter, honey, vanilla, cinnamon, nutmeg, and salt until sticky.
- Transfer mixture to a bowl and fold in carrots, walnuts, and coconut.
- Line a baking dish with parchment paper.
- Press mixture firmly into the dish and smooth the top.
- Refrigerate for at least 2 hours until firm.
- Cut into bars and serve.
