Description
A fresh and crunchy green goddess salad with finely chopped vegetables and a creamy herb-based dressing.
Ingredients
- For the salad:
- 3 medium cucumbers, finely diced
- 1/2 medium green cabbage, finely chopped
- 3 green onions, thinly sliced
- For the dressing:
- 1 cup fresh spinach
- 1/3 cup fresh parsley
- 1/4 cup fresh basil
- 1/2 avocado
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 garlic clove (optional)
- 1/4 cup cashews
- Salt, to taste
- Black pepper, to taste
- Optional: tortilla chips for serving
Instructions
- Finely dice cucumbers and chop cabbage into small pieces. Place in a large bowl with sliced green onions.
- In a blender, combine spinach, parsley, basil, avocado, olive oil, lemon juice, garlic, cashews, salt, and pepper.
- Blend until smooth and creamy.
- Taste and adjust seasoning as needed.
- Pour dressing over vegetables and toss well to coat.
- Let sit for 10–15 minutes to allow flavors to blend.
- Serve fresh, optionally with tortilla chips.
