Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 2 zucchini, sliced into rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes
- 1/2 red onion, sliced
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Juice of 1/2 lemon
Instructions
- Preheat oven to 200°C (400°F) and prepare a baking dish or sheet pan.
- In a bowl, combine zucchini, bell peppers, cherry tomatoes, and onion.
- Add olive oil, garlic, oregano, basil, paprika, salt, and pepper, then toss to coat.
- Spread vegetables in a single layer on the baking dish.
- Place chicken thighs on top, skin side up.
- Roast for 35–40 minutes until chicken is cooked and skin is golden.
- Sprinkle feta cheese over the dish and return to oven for 5 minutes.
- Drizzle lemon juice over the dish.
- Garnish with fresh parsley and serve warm.
