Ingredients
- 2 ½ cups almond flour
- ½ cup coconut sugar or brown sugar
- 3 large eggs
- ¼ cup vegetable oil or melted butter
- ¼ cup milk (dairy or plant-based)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 medium apples, peeled, cored, and diced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 180°C (350°F) and grease or line a 9-inch cake pan.
- In a bowl, whisk eggs, sugar, oil, milk, and vanilla until smooth.
- In another bowl, combine almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Toss diced apples with lemon juice and fold into the batter.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35 to 45 minutes until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
Notes
- Add chopped nuts for extra crunch.
