Ingredients

  • 1 lb (450 g) ground beef (80/20 blend preferred)
  • 1 large egg
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp dried parsley
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup shredded mozzarella or cheddar cheese
  • Cooking spray or 1 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • Mini burger buns or slider rolls (optional)
  • Burger sauce, for serving (optional)
  • Lettuce leaves, pickles, and diced onions (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, egg, Panko breadcrumbs, Parmesan cheese, minced garlic, Worcestershire sauce, parsley, onion powder, paprika, salt, and black pepper.
  3. Mix gently until just combined, avoiding overmixing.
  4. Fold in the shredded mozzarella or cheddar cheese.
  5. Using a tablespoon or cookie scoop, form the mixture into small 1-inch balls.
  6. Arrange the bites on the prepared baking sheet with space between each one.
  7. Lightly spray or brush the bites with olive oil.
  8. Bake for 15–18 minutes until golden brown and fully cooked.
  9. Meanwhile, prepare the garlic Parmesan butter sauce by combining melted butter, garlic, parsley, Parmesan cheese, and garlic powder in a bowl.
  10. Remove the bites from the oven and immediately toss or brush them with the garlic Parmesan butter sauce.
  11. Serve warm with burger sauce, ranch, ketchup, or inside mini buns with toppings if desired.

Notes

  • Use an 80/20 beef blend for the juiciest texture.
  • Avoid overmixing the meat mixture to keep the bites tender.
  • These bites can be air-fried at 380°F (190°C) for 10–12 minutes.
  • Pepper jack, gouda, or cheddar cheese all work well in this recipe.
  • For a spicy version, add jalapeños or red pepper flakes.
  • Freeze cooked or uncooked bites for up to 2 months.
  • Serve with burger sauce, garlic aioli, ranch, or spicy mayo.
