Description
Gamjachae Bokkeum is a classic Korean stir-fried potato dish made with thinly sliced potatoes, carrots, onions, and simple seasonings for a light, savory, and slightly sweet side dish served with rice or grilled foods.
Ingredients
- 2 large Yukon Gold potatoes, cut into thin matchsticks
- 1 small carrot, julienned
- 1 small onion, thinly sliced
- 2 green onions, chopped
- 2 garlic cloves, minced
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon toasted sesame seeds
- 1 tablespoon water
Instructions
- Slice potatoes into thin matchsticks and soak in cold water for 10 minutes.
- Drain and dry potatoes thoroughly.
- Heat vegetable oil in a skillet over medium heat.
- Add onion and carrot and stir-fry for 2 minutes.
- Add garlic and cook for 30 seconds.
- Add potatoes and stir-fry for 5–7 minutes until tender.
- Season with salt, pepper, and soy sauce.
- Add water if needed to prevent sticking and continue cooking.
- Finish with sesame oil, green onions, and sesame seeds.
- Serve warm.
Notes
- Soaking potatoes removes excess starch and improves texture.
- Cut potatoes evenly for consistent cooking.
- Do not over-stir to avoid breaking potatoes.
- Add chili flakes for a spicy version.
- Best served fresh but also good as leftovers.
