Description

Gamjachae Bokkeum is a classic Korean stir-fried potato dish made with thinly sliced potatoes, carrots, onions, and simple seasonings for a light, savory, and slightly sweet side dish served with rice or grilled foods.


Ingredients

  • 2 large Yukon Gold potatoes, cut into thin matchsticks
  • 1 small carrot, julienned
  • 1 small onion, thinly sliced
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon water

Instructions

  1. Slice potatoes into thin matchsticks and soak in cold water for 10 minutes.
  2. Drain and dry potatoes thoroughly.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Add onion and carrot and stir-fry for 2 minutes.
  5. Add garlic and cook for 30 seconds.
  6. Add potatoes and stir-fry for 5–7 minutes until tender.
  7. Season with salt, pepper, and soy sauce.
  8. Add water if needed to prevent sticking and continue cooking.
  9. Finish with sesame oil, green onions, and sesame seeds.
  10. Serve warm.

Notes

  • Soaking potatoes removes excess starch and improves texture.
  • Cut potatoes evenly for consistent cooking.
  • Do not over-stir to avoid breaking potatoes.
  • Add chili flakes for a spicy version.
  • Best served fresh but also good as leftovers.
