Ingredients
- 3 large ripe bananas (about 1 1/2 cups mashed)
- 2 large eggs
- 1 cup rolled oats
- 1/2 cup almond butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts or almonds (optional)
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 180°C (350°F) and prepare a loaf pan with parchment or grease.
- Mash bananas in a bowl until smooth.
- Add eggs and whisk until combined.
- Mix in almond butter and vanilla extract until smooth.
- Add oats, baking soda, cinnamon, and salt, mixing well.
- Fold in optional nuts or chocolate chips if using.
- Pour batter into loaf pan and smooth the top.
- Bake for 30–35 minutes until a toothpick comes out clean.
- Cool for 10 minutes in pan, then transfer to a rack to cool completely.

- Use very ripe bananas for natural sweetness.
- Blend oats for a smoother texture if desired.
