Description

A moist and fragrant feijoa cake with a soft crumb, blending tropical fruit flavor with warm spices for a comforting dessert.


Ingredients

  • 2 cups feijoa pulp (about 68 ripe feijoas)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom

Instructions

  1. Preheat oven to 180°C (350°F) and grease a cake pan with parchment paper.
  2. Scoop and lightly mash feijoa pulp.
  3. In a bowl, whisk eggs, granulated sugar, and brown sugar until smooth.
  4. Add oil, yogurt, and vanilla extract, mixing well.
  5. In another bowl, sift flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  6. Gradually fold dry ingredients into wet mixture without overmixing.
  7. Stir in feijoa pulp until evenly combined.
  8. Pour batter into prepared pan and smooth the top.
  9. Bake for 40–45 minutes until a toothpick inserted comes out clean.
  10. Cool in pan for 10 minutes, then transfer to a rack to cool completely before serving.

  • Add nuts like walnuts or almonds for extra texture.
  • Mix in citrus zest for a brighter flavor.
  • Do not overmix to keep the cake light and tender.
  • Frozen feijoa pulp can be used if thawed and drained.
