Ingredients
- 2 cups feijoa pulp (about 6–8 ripe feijoas)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
Instructions
- Preheat oven to 180°C (350°F) and grease a cake pan with parchment paper.
- Scoop and lightly mash feijoa pulp.
- In a bowl, whisk eggs, granulated sugar, and brown sugar until smooth.
- Add oil, yogurt, and vanilla extract, mixing well.
- In another bowl, sift flour, baking powder, baking soda, salt, cinnamon, and cardamom.
- Gradually fold dry ingredients into wet mixture without overmixing.
- Stir in feijoa pulp until evenly combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a rack to cool completely before serving.
Notes
- Add nuts like walnuts or almonds for extra texture.
- Mix in citrus zest for a brighter flavor.
- Do not overmix to keep the cake light and tender.
- Frozen feijoa pulp can be used if thawed and drained.
- Optional glaze with powdered sugar and lemon juice enhances taste.
