Description

Easy Kolacky cookies are soft and flaky Eastern European pastries made with buttery cream cheese dough and filled with sweet fruit preserves, then finished with a delicate dusting of powdered sugar.


Ingredients

  • 1 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup raspberry jam
  • 3/4 cup apricot preserves
  • 1/3 cup powdered sugar

Instructions

  1. In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
  2. Gradually add the flour and salt, mixing until a soft dough forms. Avoid overmixing.
  3. Shape the dough into a flat disc, wrap tightly in plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Lightly flour a work surface and roll the chilled dough to about 1/8-inch thickness.
  6. Cut the dough into 2 1/2-inch squares using a knife or pastry cutter.
  7. Place about 1 teaspoon of jam in the center of each square.
  8. Fold two opposite corners toward the center and press gently to seal.
  9. Arrange the cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
  10. Bake for 12 to 15 minutes until the edges are lightly golden.
  11. Allow the cookies to cool for several minutes before transferring to a wire rack.
  12. Dust generously with powdered sugar before serving.
