Easy Kolacky cookies are soft and flaky Eastern European pastries made with buttery cream cheese dough and filled with sweet fruit preserves, then finished with a delicate dusting of powdered sugar.
Ingredients
- 1 cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup raspberry jam
- 3/4 cup apricot preserves
- 1/3 cup powdered sugar
Instructions
- In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
- Gradually add the flour and salt, mixing until a soft dough forms. Avoid overmixing.
- Shape the dough into a flat disc, wrap tightly in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Lightly flour a work surface and roll the chilled dough to about 1/8-inch thickness.
- Cut the dough into 2 1/2-inch squares using a knife or pastry cutter.
- Place about 1 teaspoon of jam in the center of each square.
- Fold two opposite corners toward the center and press gently to seal.
- Arrange the cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
- Bake for 12 to 15 minutes until the edges are lightly golden.
- Allow the cookies to cool for several minutes before transferring to a wire rack.
- Dust generously with powdered sugar before serving.
