Description

Homemade stracciatella cheese is a creamy Italian cheese mixture made from shredded fresh mozzarella and heavy cream. Rich, silky, and incredibly simple to prepare, it is perfect for pizzas, pasta, salads, crostini, and elegant appetizers.


Ingredients

  • 8 ounces (225 g) fresh mozzarella packed in water
  • 1/2 cup (120 ml) heavy cream
  • 1/4 teaspoon salt, or to taste
  • Optional: fresh basil leaves
  • Optional: cherry tomatoes
  • Optional: olive oil
  • Optional: toasted bread
  • Optional: fresh cracked black pepper

Instructions

  1. Remove the fresh mozzarella from its packaging and drain completely.
  2. Pat the mozzarella dry gently with paper towels to remove excess moisture.
  3. Tear the mozzarella into thin strands and small irregular pieces using clean hands.
  4. If needed, lightly shred larger pieces with a knife for a finer texture.
  5. Transfer the mozzarella strands into a medium mixing bowl.
  6. Slowly pour the heavy cream over the mozzarella, adding enough to create a creamy consistency.
  7. Add the salt and gently stir everything together with a spoon.
  8. Let the mixture rest for about 5 minutes so the mozzarella absorbs some of the cream.
  9. Taste and adjust the seasoning if needed.
  10. Serve immediately slightly cool or at room temperature with your favorite accompaniments.
