Description

Soft and chewy date energy balls made with wholesome ingredients, naturally sweetened and perfect for a quick, no-bake snack.


Ingredients

  • 1 1/2 cups pitted Medjool dates
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup shredded coconut
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Place the pitted dates in a food processor and blend until a sticky paste forms.
  2. If dates are dry, soak in warm water for 10 minutes, then drain before blending.
  3. Add oats, almond butter, coconut, chia seeds, honey, vanilla, cinnamon, and salt.
  4. Blend until the mixture is well combined and slightly sticky.
  5. Scoop small portions and roll into bite-sized balls.
  6. If sticky, dampen hands or chill mixture briefly.
  7. Place on a parchment-lined tray and refrigerate for at least 30 minutes.

  • Swap almond butter with peanut or cashew butter.
  • Add chocolate chips or chopped nuts for variety.
  • Mix in protein powder for extra nutrition.
  • Roll in cocoa powder or coconut for coating.
