Ingredients
- 2 1/4 cups all-purpose flour or bread flour
- 3/4 cup warm water (about 110°F)
- 1 teaspoon salt
- 1 packet active dry yeast (2 1/4 teaspoons)
Instructions
- In a bowl, mix warm water and yeast. Let sit 5–10 minutes until foamy.
- In a large bowl, combine flour and salt.
- Add the yeast mixture and mix until a shaggy dough forms.
- Knead on a floured surface for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour until doubled.
- Preheat oven to 475°F (245°C) and place an empty pan in the oven for steam.
- Punch down dough and divide into 3–4 portions.
- Shape each into mini baguettes and place on a lined baking sheet.
- Let rest for 20 minutes.
- Score tops with diagonal slashes.
- Add hot water to the oven pan to create steam.
- Bake for 12–15 minutes until golden and crisp.
