Ingredients
- 4 chicken drumsticks
- 1/2 cup grated parmesan cheese
- 1 cup crushed cornflakes or panko crumbs
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups lettuce, chopped
- 1/2 cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1 tablespoon Caesar or ranch dressing (optional)
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking tray with parchment paper.
- In a bowl, mix olive oil, garlic, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Add chicken drumsticks and coat them evenly with the seasoning mixture.
- In another bowl, combine parmesan cheese and crushed cornflakes or panko.
- Roll each drumstick in the crumb mixture, pressing to coat well.
- Place on the baking tray and bake for 35–40 minutes until golden and cooked through (internal temp 165°F/75°C).
- Prepare salad by mixing lettuce, cucumber, and tomatoes.
- Let chicken rest briefly, then serve with the salad and optional dressing.
