Ingredients

  • 4 chicken drumsticks
  • 1/2 cup grated parmesan cheese
  • 1 cup crushed cornflakes or panko crumbs
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups lettuce, chopped
  • 1/2 cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon Caesar or ranch dressing (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking tray with parchment paper.
  2. In a bowl, mix olive oil, garlic, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Add chicken drumsticks and coat them evenly with the seasoning mixture.
  4. In another bowl, combine parmesan cheese and crushed cornflakes or panko.
  5. Roll each drumstick in the crumb mixture, pressing to coat well.
  6. Place on the baking tray and bake for 35–40 minutes until golden and cooked through (internal temp 165°F/75°C).
  7. Prepare salad by mixing lettuce, cucumber, and tomatoes.
  8. Let chicken rest briefly, then serve with the salad and optional dressing.
