Description

Ingredients

  • 1 pound Italian sausage
  • 12 ounces penne pasta
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook pasta in salted water until al dente, then drain and set aside.
  2. Brown sausage in a large skillet, then remove and set aside.
  3. Add olive oil and garlic to the same pan and sauté until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add Italian seasoning, salt, pepper, and Parmesan cheese; simmer until slightly thickened.
  6. Stir in sun-dried tomatoes and spinach until spinach wilts.
  7. Return sausage to the pan and mix well.
  8. Add cooked pasta and toss until fully coated in sauce.
  9. Serve warm with extra Parmesan if desired.
