Ingredients
- 2 pounds ground beef
- 1 cup crushed butter crackers
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon mustard
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish.
- In a large bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, salt, pepper, and garlic powder. Mix gently.
- Shape the mixture into a loaf and place in the prepared dish.
- Mix ketchup, brown sugar, and mustard to make the glaze.
- Spread half of the glaze over the meatloaf.
- Bake for 45 minutes.
- Remove from oven, spread remaining glaze, and return to oven.
- Bake for an additional 15–20 minutes until fully cooked (internal temp 70°C/160°F).
- Let rest for 10 minutes before slicing and serving.
Notes
- Avoid overmixing to keep the meatloaf tender.
- Let the meatloaf rest before slicing to retain juices.
- You can substitute crackers with breadcrumbs or oats.
- Add Worcestershire sauce for extra flavor.
- Use a meat thermometer for accurate doneness.
