Description

Rich and chewy Congo bars packed with brown sugar flavor and loaded with chocolate chips, featuring a soft, gooey center and golden edges. An easy dessert perfect for sharing or making ahead.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup unsalted butter, melted
  • 2 1/4 cups brown sugar, packed
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 175°C (350°F) and grease or line a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, mix melted butter and brown sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips evenly.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30–35 minutes, until the top is golden and a toothpick inserted in the center has a few moist crumbs.
  9. Allow to cool completely before slicing into bars.
