Ingredients
- 125 g dark chocolate (70% cocoa), finely chopped
- 3 large eggs, separated
- 10 g unsalted butter
- 1/2 cup heavy cream
- 3 tablespoons caster sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Extra whipped cream for garnish
- Chocolate shavings for topping
Instructions
- Place the chopped dark chocolate and butter in a heatproof bowl over simmering water and stir until melted and smooth.
- Remove the chocolate mixture from the heat and let it cool slightly.
- Separate the egg yolks and egg whites into separate bowls.
- Stir the egg yolks and vanilla extract into the melted chocolate mixture until glossy and fully combined.
- In another bowl, whip the heavy cream until stiff peaks form and set aside.
- Using a clean bowl, beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add the caster sugar while beating until glossy stiff peaks develop.
- Gently fold the whipped cream into the chocolate mixture using a spatula.
- Fold in the beaten egg whites in batches, mixing carefully to keep the mousse airy.
- Spoon the mousse into serving glasses or ramekins.
- Refrigerate for at least 4 to 6 hours until fully set.
- Garnish with whipped cream and chocolate shavings before serving if desired.
