Description

A rich and airy chocolate mousse made with dark chocolate, whipped cream, and eggs for a smooth, elegant dessert with deep chocolate flavor.


Ingredients

  • 125 g dark chocolate (70% cocoa), finely chopped
  • 3 large eggs, separated
  • 10 g unsalted butter
  • 1/2 cup heavy cream
  • 3 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra whipped cream for garnish
  • Chocolate shavings for topping

Instructions

  1. Place the chopped dark chocolate and butter in a heatproof bowl over simmering water and stir until melted and smooth.
  2. Remove the chocolate mixture from the heat and let it cool slightly.
  3. Separate the egg yolks and egg whites into separate bowls.
  4. Stir the egg yolks and vanilla extract into the melted chocolate mixture until glossy and fully combined.
  5. In another bowl, whip the heavy cream until stiff peaks form and set aside.
  6. Using a clean bowl, beat the egg whites with a pinch of salt until soft peaks form.
  7. Gradually add the caster sugar while beating until glossy stiff peaks develop.
  8. Gently fold the whipped cream into the chocolate mixture using a spatula.
  9. Fold in the beaten egg whites in batches, mixing carefully to keep the mousse airy.
  10. Spoon the mousse into serving glasses or ramekins.
  11. Refrigerate for at least 4 to 6 hours until fully set.
  12. Garnish with whipped cream and chocolate shavings before serving if desired.
