Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 100 g dark chocolate, finely chopped
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
- In a saucepan, whisk together cocoa powder, sugar, and salt.
- Gradually add milk, whisking until smooth.
- Heat over medium heat, stirring until warm and cocoa dissolves.
- Add chopped dark chocolate and stir until fully melted.
- In a separate bowl, whisk egg yolks until slightly pale.
- Slowly add a small amount of warm chocolate mixture to the yolks while whisking to temper.
- Return the tempered yolk mixture to the saucepan.
- Cook on low heat, stirring constantly, until thick enough to coat the back of a spoon.
- Remove from heat and stir in heavy cream and vanilla extract.
- Cool completely, then refrigerate for at least 4 hours or overnight.
- Churn in an ice cream maker according to instructions.
- Transfer to a container and freeze for at least 2 hours before serving.
