Description

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 100 g dark chocolate, finely chopped
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. In a saucepan, whisk together cocoa powder, sugar, and salt.
  2. Gradually add milk, whisking until smooth.
  3. Heat over medium heat, stirring until warm and cocoa dissolves.
  4. Add chopped dark chocolate and stir until fully melted.
  5. In a separate bowl, whisk egg yolks until slightly pale.
  6. Slowly add a small amount of warm chocolate mixture to the yolks while whisking to temper.
  7. Return the tempered yolk mixture to the saucepan.
  8. Cook on low heat, stirring constantly, until thick enough to coat the back of a spoon.
  9. Remove from heat and stir in heavy cream and vanilla extract.
  10. Cool completely, then refrigerate for at least 4 hours or overnight.
  11. Churn in an ice cream maker according to instructions.
  12. Transfer to a container and freeze for at least 2 hours before serving.
