Wholesome no-bake chocolate date quinoa bites made with natural ingredients, offering a rich cocoa flavor, nutty texture, and a naturally sweet, energy-boosting snack.


Ingredients

  • 1 cup cooked quinoa, cooled
  • 1 cup soft pitted dates
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons natural peanut butter or almond butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons mini dark chocolate chips
  • 2 tablespoons shredded coconut (optional)
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Ensure quinoa is cooked and completely cooled.
  2. Blend pitted dates in a food processor until a sticky paste forms.
  3. Add quinoa, cocoa powder, nut butter, vanilla extract, honey or maple syrup, and salt.
  4. Blend until a thick, sticky mixture forms.
  5. Transfer to a bowl and fold in chocolate chips, coconut, and chia seeds if using.
  6. Mix well to distribute evenly.
  7. Roll mixture into bite-sized balls (about 1–1.5 inches).
  8. Place on a parchment-lined tray.
  9. Refrigerate for at least 30 minutes until firm.
  10. Serve chilled or at room temperature.
