Ingredients
- 1 cup cooked quinoa, cooled
- 1 cup soft pitted dates
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons natural peanut butter or almond butter
- 1 teaspoon vanilla extract
- 2 tablespoons honey or maple syrup
- 2 tablespoons mini dark chocolate chips
- 2 tablespoons shredded coconut (optional)
- 1 tablespoon chia seeds (optional)
- Pinch of salt
Instructions
- Ensure quinoa is cooked and completely cooled.
- Blend pitted dates in a food processor until a sticky paste forms.
- Add quinoa, cocoa powder, nut butter, vanilla extract, honey or maple syrup, and salt.
- Blend until a thick, sticky mixture forms.
- Transfer to a bowl and fold in chocolate chips, coconut, and chia seeds if using.
- Mix well to distribute evenly.
- Roll mixture into bite-sized balls (about 1–1.5 inches).
- Place on a parchment-lined tray.
- Refrigerate for at least 30 minutes until firm.
- Serve chilled or at room temperature.
