Description

A soft and rich chocolate baked oatmeal that combines hearty oats with cocoa and melty chocolate for a cozy breakfast or dessert-like treat.


Ingredients

  • 2 cups gluten-free rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/3 cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1/3 cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 190°C (375°F) and grease a baking dish.
  2. Mix oats, cocoa powder, baking powder, cinnamon, and salt in a bowl.
  3. In another bowl, whisk eggs, milk, maple syrup, melted butter, vanilla, and mashed banana.
  4. Combine wet and dry ingredients and stir until mixed.
  5. Fold in chocolate chips, reserving some for topping.
  6. Pour mixture into baking dish and spread evenly.
  7. Sprinkle remaining chocolate chips on top.
  8. Bake for 30–35 minutes until set but still soft.
  9. Let rest for 5–10 minutes before serving.

Notes

  • Do not overbake to keep texture soft.
  • Add berries or nuts for variation.
  • Use plant-based milk for dairy-free option.
  • Banana adds natural sweetness and moisture.
