Ingredients
- 2 cups gluten-free rolled oats
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/3 cup maple syrup or honey
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- 1/3 cup chocolate chips (plus extra for topping)
Instructions
- Preheat oven to 190°C (375°F) and grease a baking dish.
- Mix oats, cocoa powder, baking powder, cinnamon, and salt in a bowl.
- In another bowl, whisk eggs, milk, maple syrup, melted butter, vanilla, and mashed banana.
- Combine wet and dry ingredients and stir until mixed.
- Fold in chocolate chips, reserving some for topping.
- Pour mixture into baking dish and spread evenly.
- Sprinkle remaining chocolate chips on top.
- Bake for 30–35 minutes until set but still soft.
- Let rest for 5–10 minutes before serving.
Notes
- Do not overbake to keep texture soft.
- Add berries or nuts for variation.
- Use plant-based milk for dairy-free option.
- Banana adds natural sweetness and moisture.
- Store leftovers refrigerated and reheat with a splash of milk.
