Ingredients
- Chicken breasts 2 large sliced into thin cutlets
- All-purpose flour 1/2 cup
- Salt 1 teaspoon
- Black pepper 1/2 teaspoon
- Olive oil 2 tablespoons
- Unsalted butter 2 tablespoons
- Garlic cloves 3 minced
- Chicken broth 1 cup
- Fresh lemon juice 1/3 cup
- Capers 1/4 cup drained
- Fresh parsley 1/4 cup chopped
- Red pepper flakes 1/2 teaspoon optional
Instructions
- Pound chicken cutlets to an even thickness.
- Mix flour with salt and pepper, then dredge chicken lightly.
- Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
- Cook chicken for 3–4 minutes per side until golden and cooked through, then remove.
- Add remaining butter and sauté garlic for 30 seconds.
- Pour in broth and lemon juice, scraping browned bits.
- Add capers and red pepper flakes, simmer for 3–5 minutes.
- Return chicken to skillet and spoon sauce over, simmering 2–3 minutes.
- Garnish with parsley and serve.
