Description

Ingredients

  • Chicken breasts 2 large sliced into thin cutlets
  • All-purpose flour 1/2 cup
  • Salt 1 teaspoon
  • Black pepper 1/2 teaspoon
  • Olive oil 2 tablespoons
  • Unsalted butter 2 tablespoons
  • Garlic cloves 3 minced
  • Chicken broth 1 cup
  • Fresh lemon juice 1/3 cup
  • Capers 1/4 cup drained
  • Fresh parsley 1/4 cup chopped
  • Red pepper flakes 1/2 teaspoon optional

Instructions

  1. Pound chicken cutlets to an even thickness.
  2. Mix flour with salt and pepper, then dredge chicken lightly.
  3. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
  4. Cook chicken for 3–4 minutes per side until golden and cooked through, then remove.
  5. Add remaining butter and sauté garlic for 30 seconds.
  6. Pour in broth and lemon juice, scraping browned bits.
  7. Add capers and red pepper flakes, simmer for 3–5 minutes.
  8. Return chicken to skillet and spoon sauce over, simmering 2–3 minutes.
  9. Garnish with parsley and serve.
