Ingredients
- 2 large chicken breasts, sliced in half horizontally
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 cup tomato sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup olive oil
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Slice chicken breasts in half horizontally and season with salt and pepper.
- Prepare three bowls with flour, beaten eggs, and a mixture of breadcrumbs, Parmesan, garlic powder, oregano, and paprika.
- Dredge chicken in flour, dip in eggs, then coat with breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook chicken for 4–5 minutes per side until golden and cooked through.
- Transfer chicken to a baking dish.
- Preheat oven to 200°C (400°F).
- Top each piece with tomato sauce and mozzarella cheese.
- Bake for 10–15 minutes until cheese is melted and bubbly.
- Garnish with parsley and serve.
Notes
- Use panko breadcrumbs for extra crispiness.
- Bake instead of frying for a lighter version.
- Add chili flakes for a spicy kick.
- Use provolone or extra cheese for richer flavor.
- Store leftovers in the refrigerator for up to 3 days.
