Description

Ingredients

  • 2 large boneless skinless chicken breasts, sliced into 4 cutlets
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 4 slices fresh mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Season chicken cutlets with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, cook cherry tomatoes for 3-4 minutes until softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in balsamic vinegar and lemon juice.
  6. Return chicken to the skillet and nestle into the tomatoes.
  7. Top each piece with mozzarella, cover, and cook 2-3 minutes until melted.
  8. Remove from heat and sprinkle with fresh basil before serving.
