Ingredients
- 2 large boneless skinless chicken breasts, sliced into 4 cutlets
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh lemon juice
- 4 slices fresh mozzarella cheese
- 1/4 cup fresh basil leaves, chopped
Instructions
- Season chicken cutlets with salt, pepper, garlic powder, and Italian seasoning.
- Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, cook cherry tomatoes for 3-4 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in balsamic vinegar and lemon juice.
- Return chicken to the skillet and nestle into the tomatoes.
- Top each piece with mozzarella, cover, and cook 2-3 minutes until melted.
- Remove from heat and sprinkle with fresh basil before serving.
