Description

Chicken Cauliflower Broccoli Bake is a creamy and cheesy casserole made with tender chicken, fresh vegetables, and a rich baked cheese sauce for a comforting family-friendly meal.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup mozzarella cheese, divided
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Bring a large pot of water to a boil and blanch the broccoli and cauliflower for about 3 minutes until slightly tender.
  3. Drain the vegetables well and set aside.
  4. Heat olive oil in a skillet over medium heat.
  5. Add the chopped onion and cook for 4 to 5 minutes until softened.
  6. Stir in the minced garlic and cook for 30 seconds until fragrant.
  7. In a large bowl, combine cottage cheese, sour cream, eggs, onion powder, garlic powder, paprika, salt, and black pepper.
  8. Mix until smooth and well combined.
  9. Add the cooked chicken, broccoli, cauliflower, onion mixture, cheddar cheese, and half of the mozzarella cheese.
  10. Stir until everything is evenly coated.
  11. Transfer the mixture to the prepared baking dish and spread evenly.
  12. Top with the remaining mozzarella cheese and breadcrumbs.
  13. Bake uncovered for 30 to 35 minutes until golden brown and bubbling.
  14. Let the casserole rest for 5 minutes before serving.
  15. Garnish with chopped parsley if desired.

  • Rotisserie chicken works well for a quick shortcut.
  • Frozen broccoli and cauliflower can be used if thawed and drained thoroughly.
  • Monterey Jack, Swiss, or gouda cheese can replace cheddar.
