Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup mozzarella cheese, divided
- 1/2 cup sour cream
- 2 large eggs
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1 tablespoon chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Bring a large pot of water to a boil and blanch the broccoli and cauliflower for about 3 minutes until slightly tender.
- Drain the vegetables well and set aside.
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and cook for 4 to 5 minutes until softened.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- In a large bowl, combine cottage cheese, sour cream, eggs, onion powder, garlic powder, paprika, salt, and black pepper.
- Mix until smooth and well combined.
- Add the cooked chicken, broccoli, cauliflower, onion mixture, cheddar cheese, and half of the mozzarella cheese.
- Stir until everything is evenly coated.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with the remaining mozzarella cheese and breadcrumbs.
- Bake uncovered for 30 to 35 minutes until golden brown and bubbling.
- Let the casserole rest for 5 minutes before serving.
- Garnish with chopped parsley if desired.

- Rotisserie chicken works well for a quick shortcut.
- Frozen broccoli and cauliflower can be used if thawed and drained thoroughly.
- Monterey Jack, Swiss, or gouda cheese can replace cheddar.
