Description
Soft and buttery cherry bars with a sweet-tart cherry filling and an optional light glaze, perfect for sharing and easy to prepare.
Ingredients
- For the crust and topping:
- 1 cup (225 g) unsalted butter, softened
- 1 3/4 cups (350 g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups (375 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- For the filling:
- 1 can (21 oz / 595 g) cherry pie filling
- For the glaze (optional):
- 1 cup (120 g) powdered sugar
- 2 tablespoons milk or cream
- 1/2 teaspoon almond extract or vanilla extract
Instructions
- Preheat oven to 175°C (350°F) and prepare a 15×10-inch baking pan by greasing or lining it.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually mix dry ingredients into wet ingredients until smooth batter forms.
- Spread two-thirds of the batter evenly into the pan.
- Spread cherry pie filling over the batter.
- Drop remaining batter in spoonfuls over the top.
- Bake for 30–35 minutes until lightly golden and set.
- Cool completely in the pan.
- Mix glaze ingredients and drizzle over cooled bars if desired.
- Slice and serve.
Notes
- Let bars cool fully before slicing for clean cuts.
- Do not overbake to maintain soft texture.
- Glaze is optional but adds sweetness.
- Can substitute cherry filling with other fruit fillings.
