Description

Soft and buttery cherry bars with a sweet-tart cherry filling and an optional light glaze, perfect for sharing and easy to prepare.


Ingredients

  • For the crust and topping:
  • 1 cup (225 g) unsalted butter, softened
  • 1 3/4 cups (350 g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (375 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the filling:
  • 1 can (21 oz / 595 g) cherry pie filling
  • For the glaze (optional):
  • 1 cup (120 g) powdered sugar
  • 2 tablespoons milk or cream
  • 1/2 teaspoon almond extract or vanilla extract

Instructions

  1. Preheat oven to 175°C (350°F) and prepare a 15×10-inch baking pan by greasing or lining it.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each, then stir in vanilla.
  4. In another bowl, whisk flour, baking powder, and salt.
  5. Gradually mix dry ingredients into wet ingredients until smooth batter forms.
  6. Spread two-thirds of the batter evenly into the pan.
  7. Spread cherry pie filling over the batter.
  8. Drop remaining batter in spoonfuls over the top.
  9. Bake for 30–35 minutes until lightly golden and set.
  10. Cool completely in the pan.
  11. Mix glaze ingredients and drizzle over cooled bars if desired.
  12. Slice and serve.

  • Let bars cool fully before slicing for clean cuts.
  • Do not overbake to maintain soft texture.
  • Glaze is optional but adds sweetness.
  • Can substitute cherry filling with other fruit fillings.
