Description

Caviar d’Aubergine is a silky Mediterranean eggplant spread with a rich smoky flavor, balanced by garlic, lemon, and olive oil. This elegant appetizer is perfect served with warm bread, crackers, or fresh vegetables for a light and flavorful dish.


Ingredients

  • 3 medium eggplants
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon tahini (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon ground cumin
  • 1 tablespoon extra virgin olive oil for garnish

Instructions

  1. Preheat the oven to 220°C (425°F).
  2. Wash and dry the eggplants, then pierce them several times with a fork.
  3. Place the eggplants on a parchment-lined baking tray and roast for 35 to 45 minutes, turning halfway through, until the skins are charred and the flesh is soft.
  4. Remove the eggplants from the oven and let them cool slightly.
  5. Slice the eggplants open and scoop the flesh into a colander. Let the excess liquid drain for about 10 minutes.
  6. Transfer the drained eggplant flesh to a mixing bowl.
  7. Add olive oil, garlic, lemon juice, tahini if using, salt, black pepper, and cumin.
  8. Mash with a fork for a rustic texture or blend briefly for a smoother consistency.
  9. Stir in the chopped parsley.
  10. Taste and adjust seasoning if needed.
  11. Transfer to a serving bowl and drizzle with extra virgin olive oil before serving.

Notes

  • Roasting the eggplants until deeply charred gives the spread its signature smoky flavor.
  • Serve chilled, at room temperature, or slightly warm.
  • Store in an airtight container in the refrigerator for up to 4 days.
  • For extra smokiness, add a pinch of smoked paprika.
  • Pairs beautifully with pita bread, crackers, or fresh vegetables.
