Ingredients
- 3 medium eggplants
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon tahini (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon ground cumin
- 1 tablespoon extra virgin olive oil for garnish
Instructions
- Preheat the oven to 220°C (425°F).
- Wash and dry the eggplants, then pierce them several times with a fork.
- Place the eggplants on a parchment-lined baking tray and roast for 35 to 45 minutes, turning halfway through, until the skins are charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool slightly.
- Slice the eggplants open and scoop the flesh into a colander. Let the excess liquid drain for about 10 minutes.
- Transfer the drained eggplant flesh to a mixing bowl.
- Add olive oil, garlic, lemon juice, tahini if using, salt, black pepper, and cumin.
- Mash with a fork for a rustic texture or blend briefly for a smoother consistency.
- Stir in the chopped parsley.
- Taste and adjust seasoning if needed.
- Transfer to a serving bowl and drizzle with extra virgin olive oil before serving.
Notes
- Roasting the eggplants until deeply charred gives the spread its signature smoky flavor.
- Serve chilled, at room temperature, or slightly warm.
- Store in an airtight container in the refrigerator for up to 4 days.
- For extra smokiness, add a pinch of smoked paprika.
