Description
A decadent Caramel Pecan Ice Cream Dessert made with layers of buttery oat pecan crumble, creamy vanilla ice cream, and rich caramel sauce. This frozen layered dessert is crunchy, creamy, and perfect for make-ahead entertaining.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 cup quick-cooking oats
- 1 cup packed brown sugar
- 1 cup chopped pecans
- 1 cup butter, melted
- 2 quarts vanilla ice cream, softened
- 1 1/2 cups caramel ice cream topping
Instructions
- Preheat oven to 400°F (200°C) and grease a 13×9-inch baking dish.
- Mix flour, oats, brown sugar, and pecans in a bowl.
- Add melted butter and stir until crumbly.
- Spread mixture into baking dish and bake 15–20 minutes, stirring once halfway, until golden.
- Cool completely, then press half into the bottom of the dish.
- Spread softened ice cream over crust layer evenly.
- Drizzle caramel sauce over ice cream.
- Top with remaining crumble mixture.
- Cover and freeze at least 4 hours until firm.
- Let sit 5–10 minutes before slicing and serving.
Notes
- Let crumble cool fully before assembling to prevent melting ice cream.
- Butter pecan ice cream can be used for extra flavor.
- Salted caramel adds a sweet-salty balance.
- Do not refreeze repeatedly to maintain texture.
- Best served slightly softened for easier slicing.
