Ingredients
- 2 sleeves Ritz crackers
- 1 cup unsalted butter
- 1 cup brown sugar
- 1 1/2 cups salted peanuts
- 1 teaspoon vanilla extract (optional)
- 1 cup chocolate chips (optional)
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- Arrange crackers in a single layer covering the tray.
- Melt butter in a saucepan, add brown sugar, and stir until combined.
- Bring mixture to a boil and cook for 3–4 minutes until thick and bubbly.
- Stir in vanilla extract if using.
- Pour caramel over crackers and spread evenly.
- Sprinkle peanuts evenly over the top.
- Bake for 8–10 minutes until caramel is bubbling.
- Remove from oven and sprinkle chocolate chips on top if desired, then spread once melted.
- Cool completely for about 1 hour, then break into pieces.
