Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/4 cup grated parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic glaze
  • 1 tablespoon butter
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  3. Sear chicken in olive oil for 3–4 minutes per side until golden.
  4. Transfer chicken to baking dish.
  5. In the same skillet, melt butter and sauté garlic, then add cherry tomatoes and cook briefly.
  6. Spoon tomato mixture over chicken.
  7. Top with mozzarella slices and sprinkle parmesan cheese.
  8. Bake for 18–22 minutes until chicken reaches 165°F (74°C).
  9. Rest for 5 minutes, then drizzle with balsamic glaze and garnish with basil.
