- 2 large tomatoes, diced
- 1/4 cup fresh cilantro, chopped
- Optional: salsa
- Optional: avocado
- Optional: sour cream
- Optional: hot sauce
- Optional: bell peppers
- Optional: spinach or other vegetables
Instructions
- Cook the tater tots according to the package instructions until golden and crispy, then set aside.
- In a large skillet over medium-high heat, cook the breakfast sausage, breaking it apart with a spatula until browned and fully cooked.
- Transfer the sausage to a plate and drain excess grease from the skillet.
- In a mixing bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and black pepper until fully combined.
- Pour the egg mixture into the skillet and cook over medium heat, stirring gently until the eggs are soft and scrambled.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Warm the tortillas slightly to make them easier to roll.
- Spread refried beans evenly onto each tortilla.
- Add cooked tater tots, sausage, scrambled eggs, shredded cheddar cheese, diced tomatoes, and chopped cilantro.
- Fold in the sides of the tortillas and roll tightly into burritos.
- Place the burritos seam-side down on the prepared baking sheet.
- Bake for about 20 minutes until the tortillas are lightly golden and the cheese is melted.
- Serve warm with optional salsa, sour cream, avocado, or hot sauce.
Notes
- Ground turkey or chicken sausage can replace pork sausage for a lighter version.
- Hash browns can be used instead of tater tots.
- Add sautéed spinach, mushrooms, or bell peppers for extra vegetables.
- Monterey Jack or pepper jack cheese work well as substitutes for cheddar.
- Whole wheat tortillas can be used for a healthier option.
- Allow ingredients to cool slightly before assembling to avoid soggy burritos.
- Store refrigerated for up to 4 days or freeze for up to 3 months.
- Reheat in the oven, air fryer, or microwave until fully warmed through.
