Description

A comforting Salisbury steak recipe with tender beef patties simmered in a rich mushroom-onion gravy. This hearty and senior-friendly meal is packed with savory flavor and pairs perfectly with mashed potatoes, rice, noodles, or vegetables.


Ingredients

  • 1 pound lean ground beef (85% or 90% lean)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce (alcohol-free if needed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or butter, divided
  • 1 medium onion, finely chopped
  • 8 ounces cremini or white button mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tablespoon ketchup
  • 1 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a medium bowl, gently mix the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, and black pepper until just combined. Shape into 4 oval patties.
  2. Heat 1 tablespoon olive oil or butter in a large skillet over medium-high heat. Sear the patties for 3 to 4 minutes per side until browned. Transfer to a plate.
  3. Add the remaining oil or butter to the skillet. Add the onion and cook for 5 to 7 minutes until softened.
  4. Add the mushrooms and cook for another 5 to 7 minutes until tender.
  5. Sprinkle flour over the onion and mushroom mixture. Stir for 1 minute.
  6. Slowly whisk in the beef broth while scraping the skillet to release browned bits.
  7. Stir in the ketchup and dried thyme.
  8. Return the patties to the skillet and spoon gravy over them.
  9. Reduce heat to low, cover, and simmer for 15 to 20 minutes until the patties are cooked through and the gravy thickens.
  10. Garnish with chopped parsley if desired and serve warm.

  • Do not overmix the meat mixture to keep the patties tender.
  • Ground turkey or chicken can be used instead of beef.
