Ingredients
- For the cake:
- 1 3/4 cups (220 g) all-purpose flour
- 3/4 cup (65 g) unsweetened cocoa powder
- 2 cups (400 g) granulated sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup (240 ml) buttermilk (or milk + 1 teaspoon vinegar or lemon juice)
- 1/2 cup (120 ml) vegetable oil
- 2 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 cup (240 ml) hot coffee or hot water
- For the frosting:
- 1 cup (230 g) unsalted butter, softened
- 3 1/2 cups (440 g) powdered sugar
- 1 cup (100 g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 cup (120 ml) heavy cream or milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare two 8-inch round cake pans.
- Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, buttermilk, oil, and vanilla; mix until smooth.
- Slowly stir in hot coffee or water; batter will be thin.
- Divide batter between pans and bake for 30–35 minutes.
- Cool cakes for 10 minutes, then transfer to racks to cool completely.
- Beat butter until fluffy for frosting.
- Add powdered sugar, cocoa powder, and salt gradually, mixing well.
- Add vanilla and cream, beating until smooth and spreadable.
- Place one cake layer on a plate and spread frosting on top.
- Add second layer and frost top and sides evenly.
- Decorate as desired and serve.
