Description

These Banana Split Breakfast Jars are a colorful and refreshing breakfast made with layers of creamy Greek yogurt, fresh bananas, crunchy granola, homemade berry sorbet, and juicy berries. Perfect for meal prep, brunch, or a healthy dessert.


Ingredients

  • 2 large bananas, sliced lengthwise
  • 1 cup fresh mixed berries
  • 1 cup plain or vanilla Greek yogurt
  • 1 cup granola
  • 4 scoops homemade berry sorbet
  • 2 tablespoons melted dark chocolate
  • 4 medium mason jars
  • 2 1/2 cups frozen mixed berries
  • 2 teaspoons freshly squeezed lemon juice
  • 2 tablespoons raw honey
  • 2 to 3 tablespoons warm water as needed

Instructions

  1. Prepare the berry sorbet by adding the frozen mixed berries, lemon juice, honey, and warm water into a high-speed blender or food processor.
  2. Blend until the mixture becomes smooth and creamy, scraping down the sides as needed.
  3. Transfer the sorbet mixture into a freezer-safe container, cover, and freeze for at least 2 hours until firm.
  4. Slice the bananas lengthwise and prepare the mason jars.
  5. Arrange banana slices along the inside walls of each jar for a decorative appearance.
  6. Spoon Greek yogurt evenly into each jar.
  7. Add a layer of granola over the yogurt.
  8. Top with fresh berries and a scoop of berry sorbet.
  9. Drizzle melted dark chocolate over each jar.
  10. Serve immediately while chilled.
