A rich and creamy banana foster pudding layered with caramelized bananas, smooth custard, and vanilla wafers for a comforting dessert.
Ingredients
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 tablespoon vanilla extract
- 4 ripe bananas, sliced
- 1 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter (for sauce)
- 1/2 cup heavy cream (for sauce)
- 1 teaspoon vanilla extract (for sauce)
- 1 package vanilla wafers or biscuits
Instructions
- In a saucepan, whisk sugar, cornstarch, and salt. Gradually add milk and cream, whisking until smooth.
- Cook over medium heat, stirring constantly until thickened.
- Whisk egg yolks in a bowl, temper with hot mixture, then return to saucepan.
- Cook for 2–3 minutes until smooth, then remove from heat and stir in butter and vanilla.
- In another pan, melt butter and stir in brown sugar and cinnamon.
- Add cream and simmer until thickened, then stir in vanilla and bananas.
- Layer vanilla wafers, pudding, and banana mixture in a dish.
- Repeat layers, finishing with pudding on top.
- Refrigerate for at least 3 hours before serving.
Notes
- Use ripe bananas for best flavor.
- Whisk constantly to avoid lumps in pudding.
- Chill thoroughly for best texture.
- Add nuts for extra crunch if desired.
- Best served cold but can be topped with warm sauce.
