Description

A rich and creamy banana foster pudding layered with caramelized bananas, smooth custard, and vanilla wafers for a comforting dessert.


Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 tablespoon vanilla extract
  • 4 ripe bananas, sliced
  • 1 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter (for sauce)
  • 1/2 cup heavy cream (for sauce)
  • 1 teaspoon vanilla extract (for sauce)
  • 1 package vanilla wafers or biscuits

Instructions

  1. In a saucepan, whisk sugar, cornstarch, and salt. Gradually add milk and cream, whisking until smooth.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Whisk egg yolks in a bowl, temper with hot mixture, then return to saucepan.
  4. Cook for 2–3 minutes until smooth, then remove from heat and stir in butter and vanilla.
  5. In another pan, melt butter and stir in brown sugar and cinnamon.
  6. Add cream and simmer until thickened, then stir in vanilla and bananas.
  7. Layer vanilla wafers, pudding, and banana mixture in a dish.
  8. Repeat layers, finishing with pudding on top.
  9. Refrigerate for at least 3 hours before serving.
