Description

Banana Bread Dump Cake is a warm and comforting dessert that combines ripe bananas, buttery cake mix, cinnamon, brown sugar, and crunchy pecans into an easy baked treat. With flavors similar to homemade banana bread and the simplicity of a dump cake, this dessert is perfect for family gatherings, potlucks, or cozy weeknight desserts.

Ingredients

  • Nonstick cooking spray
  • 5 to 6 ripe medium bananas, peeled and sliced
  • 1 package yellow cake mix (2-layer size)
  • 1 cup half-and-half cream
  • 1/2 cup salted butter, melted
  • 2 tablespoons packed brown sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/4 cup packed brown sugar for topping
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly coat a 13×9-inch baking dish with nonstick cooking spray.
  2. Arrange the sliced bananas evenly across the bottom of the prepared baking dish.
  3. Sprinkle the dry yellow cake mix evenly over the bananas without stirring.
  4. In a medium bowl, whisk together the half-and-half cream, melted butter, 2 tablespoons brown sugar, eggs, cinnamon, and salt until smooth.
  5. Slowly pour the liquid mixture evenly over the cake mix, covering as much of the dry mix as possible.
  6. Sprinkle the chopped pecans evenly over the top and finish with the remaining 1/4 cup brown sugar.
  7. Bake for 50 to 55 minutes, or until the top is golden brown and a toothpick inserted in the center comes out mostly clean.
  8. Allow the dump cake to cool for at least 30 minutes before serving.
  9. Serve warm or at room temperature with vanilla ice cream or whipped cream if desired.

Notes

  • Frozen bananas may be used after thawing and draining excess liquid.
  • White cake mix can replace yellow cake mix for a lighter flavor.
  • Walnuts or pistachios may be substituted for pecans.
  • Add mini chocolate chips for extra richness.
  • Drizzle caramel sauce over the dessert before serving.
  • Nutmeg or pumpkin spice can be added for warmer spice flavor.
  • Shredded coconut creates a tropical variation.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • Freeze cooled portions for up to 2 months.
