Description

This avocado chicken salad is creamy, fresh, and packed with protein. Made with tender chicken, ripe avocado, lime juice, and simple seasonings, it is a quick and satisfying meal perfect for lunch, dinner, or meal prep.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 2 ripe avocados, peeled and mashed
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 tablespoon olive oil (optional)

Instructions

  1. Place the cooked chicken into a large mixing bowl.
  2. In a separate bowl, mash the ripe avocados with a fork until mostly smooth, leaving a few chunks for texture.
  3. Add the fresh lime juice to the avocado and stir well.
