Description

Authentic French Quiche Lorraine is a classic savory tart made with a flaky homemade crust and a rich, creamy egg custard filled with smoked turkey strips. It is smooth, flavorful, and perfect for brunch, lunch, or a light dinner.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons ice-cold water
  • 6 ounces smoked turkey strips, diced
  • 3 large eggs
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 cup Gruyère cheese
  • Optional: 1 tablespoon chopped chives

Instructions

  1. Mix flour and salt, then cut in butter until crumbly.
  2. Add ice water gradually to form dough, then chill for 30 minutes.
  3. Roll dough into a tart pan and blind bake until lightly golden.
  4. Cook diced smoked turkey strips until lightly crisp.
  5. Whisk eggs, cream, nutmeg, salt, and pepper until smooth.
  6. Spread turkey (and optional cheese) into crust.
  7. Pour custard mixture into the crust.
  8. Bake at 350°F (175°C) for 35–40 minutes until set.
  9. Rest for 10 minutes, slice, and serve.

Notes

  • Blind baking prevents a soggy crust.
  • Do not overbake to avoid cracks in the custard.
  • Let quiche rest before slicing for clean cuts.
  • Store-bought crust can be used for convenience.
