A light and flavorful pasta dish with tender shrimp, crisp asparagus, and angel hair pasta tossed in a savory herb-infused broth sauce.
Ingredients
- 3 ounces uncooked angel hair pasta
- 1/2 pound jumbo shrimp, peeled and deveined
- 1/4 teaspoon salt
- 1/8 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil, divided
- 8 asparagus spears, trimmed and cut into 2-inch pieces
- 1/2 cup sliced fresh mushrooms
- 1/4 cup chopped seeded peeled tomatoes
- 4 garlic cloves, minced
- 2 teaspoons chopped green onions
- 1/2 cup chicken broth
- 1 1/2 teaspoons minced fresh basil
- 1 1/2 teaspoons minced fresh oregano
- 1 1/2 teaspoons minced fresh parsley
- 1 1/2 teaspoons minced fresh thyme
- 1/4 cup grated Parmesan cheese
Instructions
- Cook angel hair pasta according to package directions, then drain and set aside.
- Season shrimp with salt and crushed red pepper flakes.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat and cook shrimp for 2–3 minutes until pink. Remove and set aside.
- Add remaining olive oil to the skillet and sauté asparagus, mushrooms, tomatoes, garlic, and green onions for about 5 minutes until crisp-tender.
- Pour in chicken broth and stir in basil, oregano, parsley, and thyme.
- Return shrimp to the skillet and add cooked pasta.
- Toss gently for 1–2 minutes until heated through and coated with sauce.
- Sprinkle with Parmesan cheese and serve warm.
Notes
- Use spaghetti or linguine instead of angel hair if desired.
- Add vegetables like zucchini, spinach, or bell peppers.
- Increase red pepper flakes for more heat.
- Add a squeeze of lemon juice for brightness.
- Store leftovers in the refrigerator for up to 2 days.
- Reheat gently with a splash of broth to loosen the sauce.
