Ingredients

  • 1 cup old fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup softened butter
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup packed brown sugar
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
  2. Mix oats, flour, butter, salt, baking soda, and brown sugar until crumbly.
  3. In a saucepan, cook rhubarb, sugar, cornstarch, and water until thickened.
  4. Remove from heat, stir in vanilla, and let cool slightly.
  5. Reserve 2/3 cup crumb mixture and press the rest into the pan as crust.
  6. Spread rhubarb filling over crust evenly.
  7. Sprinkle reserved crumb mixture on top.
  8. Bake for 30–40 minutes until golden and set.
  9. Cool completely before slicing into bars.
