Ingredients
- 1 cup old fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup softened butter
- 1/8 teaspoon salt
- 1/8 teaspoon baking soda
- 1/2 cup packed brown sugar
- 1 1/2 cups chopped rhubarb
- 3/4 cup granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
- Mix oats, flour, butter, salt, baking soda, and brown sugar until crumbly.
- In a saucepan, cook rhubarb, sugar, cornstarch, and water until thickened.
- Remove from heat, stir in vanilla, and let cool slightly.
- Reserve 2/3 cup crumb mixture and press the rest into the pan as crust.
- Spread rhubarb filling over crust evenly.
- Sprinkle reserved crumb mixture on top.
- Bake for 30–40 minutes until golden and set.
- Cool completely before slicing into bars.

- Drain excess liquid if using frozen rhubarb.
