Ingredients
- 6 medium apples, peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup fine dry breadcrumbs
- 2 tablespoons unsalted butter
- 8 sheets phyllo dough, thawed
- 1/2 cup unsalted butter, melted
- 2 tablespoons powdered sugar (for dusting)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Melt 2 tablespoons butter in a skillet and toast breadcrumbs until golden, then set aside.
- In a bowl, combine apples, sugars, cinnamon, nutmeg, lemon juice, vanilla, and raisins.
- Stir in toasted breadcrumbs to absorb moisture.
- Layer phyllo sheets one by one, brushing each with melted butter.
- Place apple filling along one edge, fold sides, and roll into a log.
- Transfer seam-side down to baking sheet and brush with remaining butter.
- Bake for 35–40 minutes until golden and crisp.
- Cool for 15 minutes, dust with powdered sugar, slice, and serve.

- Keep phyllo dough covered with a damp towel to prevent drying.
- Breadcrumbs help prevent a soggy filling.
- Use tart apples for better flavor balance.
- Add nuts or dried cranberries for variation.
