Description
Air Fryer Beets are a quick and healthy side dish made by roasting fresh beet cubes in the air fryer until tender inside with lightly caramelized, naturally sweet edges and a rich earthy flavor.
Ingredients
- 4 medium fresh beets, peeled and cut into 1-inch cubes
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Peel and cut beets into evenly sized 1-inch cubes.
- Place beets in a bowl and toss with olive oil, salt, pepper, garlic powder, and thyme.
- Preheat air fryer to 380°F (193°C) for 3 minutes.
- Add beets to air fryer basket in a single layer.
- Cook for 18–22 minutes, shaking halfway through.
- Check doneness by piercing with a fork; beets should be tender.
- Remove and garnish with fresh parsley before serving.
Notes
- Cut beets evenly so they cook at the same rate.
- Do not overcrowd the air fryer basket for best caramelization.
- Add a splash of balsamic glaze after cooking for extra sweetness.
- Golden beets can be used for a milder flavor.
