Description

Air Fryer Beets are a quick and healthy side dish made by roasting fresh beet cubes in the air fryer until tender inside with lightly caramelized, naturally sweet edges and a rich earthy flavor.


Ingredients

  • 4 medium fresh beets, peeled and cut into 1-inch cubes
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Peel and cut beets into evenly sized 1-inch cubes.
  2. Place beets in a bowl and toss with olive oil, salt, pepper, garlic powder, and thyme.
  3. Preheat air fryer to 380°F (193°C) for 3 minutes.
  4. Add beets to air fryer basket in a single layer.
  5. Cook for 18–22 minutes, shaking halfway through.
  6. Check doneness by piercing with a fork; beets should be tender.
  7. Remove and garnish with fresh parsley before serving.

Notes

  • Cut beets evenly so they cook at the same rate.
  • Do not overcrowd the air fryer basket for best caramelization.
  • Add a splash of balsamic glaze after cooking for extra sweetness.
  • Golden beets can be used for a milder flavor.
