Ingredients

  • 3 medium zucchini, grated
  • 1 teaspoon salt
  • 3 eggs
  • 3/4 cup feta cheese, crumbled
  • 1/2 cup shredded mozzarella or kasseri
  • 1/4 cup grated Parmesan or Pecorino
  • 3 tablespoons extra-virgin olive oil
  • 2 green onions, chopped
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill or mint, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Optional pinch of nutmeg or Aleppo pepper

Instructions

  1. Grate zucchini, sprinkle with salt, and let sit for 10 minutes.
  2. Squeeze out excess moisture using a towel.
  3. Preheat oven to 190°C (375°F) and grease a baking dish.
  4. Whisk eggs and olive oil in a bowl.
  5. Add zucchini, cheeses, green onions, herbs, oregano, pepper, and optional spices.
  6. Mix until well combined.
  7. Transfer mixture to baking dish or muffin tins and smooth the top.
  8. Bake for 30–35 minutes until golden and set.
  9. Let rest for 5–10 minutes before serving.
